Tomato Sauce

1/4c. olive oil
liberal sprinkle crushed red pepper flakes
sea salt to taste
3 cloves garlic
28oz. no-salt-added diced tomatoes
zest of 1 lemon


This is the recipe for lazy people who want to eat real tomato sauce without all the sugar and weird ingredients.  It takes 5 minutes to cook and makes enough to spread on a pizza and still have enough left over to freeze (or put on more pizza).
Add olive oil, red pepper, salt and garlic to a saucepan and heat over medium heat for less than a minute-- avoid browning the garlic.  Then add the tomatoes and bring to a simmer for around 5 minutes.  Remove from the heat, then add the lemon zest.  For a smoother texture, puree a few ladle-fulls of the sauce and then mix back in with the rest.
